Sweet Baby Mangoes!
Baby Ataulfo mangoes, or Champagne mangoes, have thin honey golden skin and flesh. They are kidney-shaped with a slight teardrop at one end. The seed is smaller relative to its overall size than other mango varieties. The flesh is sweet, tropical, and smooth, and not stringy like other mangoes. Available in the spring through late summer, Ataulfo mangoes contain potassium, magnesium, and other micronutrients.
Ripening and Storage:
Baby Ataulfo mangoes turn green to golden yellow, and the skin gets a slightly wrinkly when ripe. Leave on the counter to ripen. Once ripe, refrigerate for up to one week. Refrigerate sliced mango for a few days.
Remove the skin and seed as you would other mangoes.
Eat fresh as-is, add to fruit salads, desserts and drinks such as smoothies and cocktails, or even serve in savory dishes.
