Tiger nuts are also known as chufa, yellow nutsedge, or earth almonds, and are not actually nuts, but rather tubers. About the size of a chickpea, these have a chewy texture and sweet nutty flavor with a hint of coconut. Tiger nuts originally came from Egypt where they were used as both food and medicine. Historically, they were also used to as an aphrodisiac. These provide many nutrients such as vitamin E and dietary fiber.
Store in a sealed container in a cool, dry, dark place.
Eat these raw, roast, soak, or boil. Tiger nuts become softer and easier to chew when soaked or boiled. Eat these on their own or top cereal, oatmeal, smoothies, salad, and yogurt. Mix with other nuts, seeds, and dried fruit for your own trail mix. Grind into a powder for a naturally gluten-free flour for bread and other baked goods, or binder in veggie burgers. You can even soak in water and blend into tiger nut milk.
