Also known as the 'horned cucumber' because of its spiky rind, this fruit has an exotic appearance, taste and texture. The color of the thick, spiky rind is a mottle of bright yellow and orange. The inside is filled with gooey, lime green flesh that is full of white seeds reminiscent of cucumber seeds. The Kiwano fruit has a sweet and tart, banana-lime taste. It is about the size of a large pear. With a high water content, this fruit contains a rich amount of vitamin C.
Ripening and Storage:
This fruit has a dark green rind but turns to a creamy orange as it ripens. The brighter the orange skin, the sweeter the fruit. Store in the refrigerator for up to a week.
The easiest way to eat this fruit is to cut it in half and scoop out the pulp with a spoon. The seeds are edible. The sweet-tart flavor is enhanced when chilled.
Kiwano's can be added to yogurt, sorbets, salads, or put it on top of ice cream. It can be used in both sweet and savory recipes either with or without its seeds. To remove the seeds press the flesh through a fine mesh sieve. The seedless juice can be used to flavor cocktails, smoothies, dressings and sauces. As an added bonus, the hollowed shell makes for an excellent and unique serving vessel. Its taste pairs well with tropical fruits such as passion fruit, melon, banana, and coconut.
