California Caviar Limes


Local California grown and non-sprayed organic caviar limes sold by 1/2lb. 

Also known as finger limes, this fruit is very small and has a narrow and elongated shape. Caviar limes are coveted for their bright flavor and unique popping consistency. The pulp or juicy pearls (or vesicles) inside resemble fish roe (hence the name) and range in color from white, pink, to pale green. These pearls create a popping sensation in your mouth with a burst of sweet, tangy lime flavor. These limes have recently risen to fame among high-end chefs but they are actually an ancient fruit that has been cultivated for thousands of years in Australia where it is native. They are cultivated through limited production in tropical regions and are therefore relatively rare. Their thin inedible skin can range in color from dark green, light green, purple, red-orange, to black. Like with other citrus fruits, caviar or finger limes have high amounts of vitamin C among other micronutrients.


Ripening and Storage:

Caviar limes are harvested ripe and ready to eat when you receive them. They will keep for about a week stored in a bag on the counter, or 2-4 weeks when wrapped in plastic and stored in the refrigerator. They can also be frozen whole and stored for 6-12 months in the freezer.


Suggested Uses:

These limes are very tiny and oblong so they do not cut the same as a regular lime and the fruit inside is different. Cut the caviar lime in half and with a little squeeze, the pearls will ooze out of the fruit and be ready to use.

Caviar limes are most commonly used as a garnish on cocktails that traditionally use limes such as mojitos, but they are also excellent in both raw and cooked applications. Use the pearls to garnish and brighten salads, tacos, grain bowls, and tofu. Like regular limes, with its acidity, caviar limes make a wonderful complement to a variety of seafood and savory dishes such as grilled salmon, seared scallops, sushi, and ceviche. They can be incorporated into desserts such as cheesecake, ice cream, cookies, and cakes wherever key limes may be used.
