Yellow kiwis,  also know as a gold kiwi, are oblong shaped, with smooth, hairless, golden-brown, very thin skin, and the flesh is a rich golden yellow with a small core and fewer black seeds than the green kiwi. The flavor is tropical and very sweet with hints of mango, strawberry, and pineapple. Yellow kiwi are available summer through spring, and are high in vitamin C.

Ripening and Storage:

A ripe kiwi will be slightly soft to the touch and once they are ripe they should be kept in the refrigerator for up to a couple of weeks or a few days on the counter. You can speed up the ripening process by putting your kiwis and a banana into a paper bag together at room temperature.

Suggested Uses:

The entire yellow kiwi fruit is edible: skin, flesh, and seeds. Cut in half and use a spoon to scoop out the pulp.

Delicious when enjoyed fresh as-is and it makes a beautiful display when thinly sliced and added to a fruit salad. May also be added to smoothies or anywhere you might add a green kiwi, although the golden kiwi is less acidic and more sweet.
