These look like bamboo with defined segments, and can either be green with brownish marks or purple in color. Sugarcane is juicy, sweet, refreshing, and delicious! Thin sticks tend to be sweeter than thick ones. Sugarcane takes two years to mature and is available year-round. It makes up 70% of the world's sugar supply.
Ripening and Storage:
Tap the stick and if it makes a metallic sound, it is ready to use. Wrap the sticks in plastic wrap otherwise they will dry out. Store in the fridge for up to a week, or freeze for up to a few months.
Slice about an inch off the ends to remove the dried out bits. Cut the sugarcane into smaller strips, then remove the outer skin.
These sticks can be chewed on to extract the sweet juice, or put through a juicer. If chewing, do not ingest the fibrous pulp as it is very tough. Sugarcane sticks can also be used as skewers or swizzle sticks in mojitos and other drinks.
